Remember when your parents put you in your pyjamas, packed you in the station wagon and took you to the drive-in movies? You watched wide-eyed from the back seat until you fell asleep. Black currants have so much natural pectin you don’t need Certo in this foolproof recipe.

  • 3 cups black currants
  • 2 cups water
  • 5 cups sugar
  • Boil black currants and water vigorously for 3 minutes.
  • Add sugar.
  • Return to a full, vigorous boil for 3 minutes.
  • Pour immediately into sterilized jam jars with sealable lids.

MUST CHEER

Jordyn Jacobs is a 10-year-old Cobourg student who is generous beyond her years. She has used her time during lockdown to shine a light on community advocacy and create fun ways to raise funds for her favourite charities. One of Jordyn’s most popular events was the hands-on Zoom baking tutorial she organized to raise money for the Northumberland Hills Hospital Foundation and the Fare Share Foodbank. Jordyn has not only raised money for charity, she’s also raised the bar for community caring.
